A couple of weeks ago I ran into a video, where a lady was saying us Jamaicans add, “Jamaican” to everything, even when it is not unique to us, and call it our own. Is this true? Absolutely.

As is common in most cultures, in addition to delicious (and sometimes interesting) local dishes, we also have fusion meals adopted from other regions of the world.

But here’s the thing, our flavours are so strong and so uniquely us, that the slightest twist or addition to any recipe completely transforms it, earning us the right to label it as Jamaican. Would you agree?

Take the pineapple cake for instance, I am sure you’ve had, or at least, heard of it before. But have you ever had a delectable slice of Jamaican pineapple rum cake? Well, you may have to take a bite to truly know the difference and I am about to share a pretty straightforward recipe that you can try for yourself at home.

Jamaican Pineapple Rum Cake Recipe

INGREDIENTS

  • 1 fresh pineapple, peeled, cored, and finely chopped
  • 1 cup grated coconut, (because we're bringing the island vibes)
  • 1 cup unsalted butter, softened
  • 2 cups brown sugar, (for that rich sweetness)
  • 4 large eggs, (adding the magic touch)
  • 3 cups all-purpose flour, (the foundation of our cake)
  • 1 teaspoon baking powder, (for the perfect rise)
  • 1/2 teaspoon baking soda, (our baking buddy)
  • 1/2 teaspoon salt, (to balance the sweetness)
  • 1 cup Jamaican rum (go for the good stuff, like Appleton Estate or Wray and Nephew White)
  • 1/2 cup buttermilk, (keeping it moist and tangy)
  • 1 teaspoon vanilla extract (enhancing the flavours)

For the Glaze:

  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup Jamaican rum 
  • 1/2 cup chopped pineapple, (for that extra burst of Jamaican flavour)

PROCEDURE

  1. Preheat your oven to 350 degrees Fahrenheit (180 degrees Celsius). Grease and flour a bundt cake pan – we're going for a showstopper.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until it's light and fluffy. This is the base of your cake decadence.
  3. Add the eggs one at a time, beating well after each addition. It's all about creating a smooth, creamy texture.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt – our dry dream team.
  5. Gradually add the dry ingredients to the butter-sugar-egg mixture, alternating with the buttermilk. Mix until just combined. This is the canvas for our tropical masterpiece.
  6. Stir in the chopped pineapple, grated coconut, vanilla extract, and the star of the show – 1 cup of Jamaican rum. Let the Caribbean flavours mingle and dance in the batter.
  7. Pour the batter into the prepared bundt pan, ensuring an even distribution. Smooth the top with a spatula for that perfect finish.
  8. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the centre comes out clean. The aroma of pineapple and rum will fill your kitchen, creating anticipation for the deliciousness to come.
  9. While the cake is baking, let's prepare the glaze. In a saucepan over medium heat, melt the butter, brown sugar, and chopped pineapple. Stir in the Jamaican rum and let it simmer for 5-7 minutes, allowing the flavours to meld into a luscious glaze.
  10. Once the cake is out of the oven, let it cool in the pan for about 15 minutes. Then, transfer it to a wire rack to cool completely.
  11. Drizzle the warm pineapple rum glaze over the cooled cake, allowing it to soak in and create a glossy, flavorful finish.
  12. Slice, serve, and savour the taste of Jamaica in every bite. This Pineapple Rum Cake is not just a dessert; it's a tropical escape for your taste buds.
